Homemade Granola with Yoghurt and Berries

Inspiration:
I love breakfast and this recipe is great to have with whatever you feel like that morning. Enjoy with berries, yoghurt, banana, milk, honey or apple.
Once you make this you will never want to buy granola again, it lasts well and tastes the business!

Makes 20 serves
Chefs Tips:
Serve with local Udderfarm yoghurt, berries from the farmers market and honey from Nulkaba Hatchery or Little Hill Farm.

Ingredients:

Homemade granola
150g wheat flakes
175g rolled oats
100g whole almonds with the skin on
100g whole macadamia
100g sunflower seeds
100g whole skinned hazelnuts
150g corn flakes
100g whole cashew nuts
 
1.    Mix all of above ingredients together

1g of ground cinnamon
3g fine sea salt
175g honey
175g maple syrup
65g light brown sugar
35g vegetable oil
12g vanilla essence 

2.    Place above ingredients in saucepan and warm on stove
3.    Carefully mix syrup with dry ingredients
4.    Place on large sheet trays with baking paper spread out evenly to insure even baking.
5.    Bake at 160°c for approximately 15 minutes till golden in color, making sure you rotate trays and stir every few minutes to get even coloring
6.    Leave to cool on trays, stirring from time to time to avoid clumping

75g golden raisins
75g dark raisins
75g sultanas
150g coconut strips (thick) not desiccated

8.    Add dried fruit and mix through
9.    Place granola into bags and vacuum or sandwich bags and store until use.
10.    Serve in a bowl or glass with berries and yoghurt
